If the former, then taking eggs from chickens is wrong, end of story. Eggs do not belong to us. And of course the industrial mechanization of egg production with its well-documented abuses (overcrowding, beak amputation, etc.) is also inexcusable. If the latter, then it might be justifiable if a strong enough case can be made that without large-scale immunization we will have a mass pandemic and even greater death and suffering. The industrialization still presents a huge problem. This ignores the regrettably-large percentage of vegans who also buy into various forms of anti-vax and other alt-med woo.
